Gluten Free Tomato Onion Basil Pizza Recipe…Delicious!


In the last 7 months, 3 members of our family have found out that we have gluten allergies and sensitivities.  This has opened up my world to “gluten-free” living and awareness.  Luckily there are a few companies that offer good options for eating but I prefer to make things homemade when possible. I am an avid bread, dough maker so having to make breads and doughs and bake without my wheat flour and gluten has been a bit challenging. I am learning and still experimenting. I will continue to share some yummy options for this.  Removing gluten has become easier as time goes on. And our tummies are feeling better. My husband had so much sensitivity that he could barely walk to to severe inflammation in his joints and body. Over 6 weeks, 20 pounds of inflammation left his body. And he feels great and can walk without pain. With one out of every 3 people now with gluten issues, it may be worth an food allergy test if you are having health issues that are not being addressed.

Homemade Gluten Free Basil Tomato Onion Pizza


 Gluten-Free Pizza/Flatbread Crust


  • 3 cups gluten free flour blend
  • 1 Tbsp yeast
  • 1 ½ Cup warm water(110 degrees-to activate yeast)
  • 3 Tbsp raw sugar
  • 1 tsp salt
  • ½ tsp baking powder
  • 1 Tbsp olive oil


Mix  yeast, water and only 1 Tbsp sugar at first for at least 5 minutes to activiate.  Mix rest of dry ingredients then add in olive oil to yeast mixture.


I use a baking pizza stone and sprinkle corn meal on bottom if you like.


Work dough so that it stretches out thin(May be a bit sticky, spray hands and work surface with cooking spray if you need to).  Bake for 30 minutes at 350 degrees.


While baking, I make the homemade pizza sauce.


Pizza Sauce


  • 16 oz tomato sauce
  • 8 oz tomato paste
  • 1 tsp minced garlic
  • 1 tsp raw sugar
  • 1 Tbsp oregano
  • 1 Tbsp Basil
  • ½ tsp salt
  • ½ tsp black pepper
  • Mix. It makes enough for future pizzas. I store left overs in refrigerator.


When crust comes out. Brush with additional olive oil. Spread sauce on. Sprinkle shredded cheese (mozzarella). Add fresh sliced organic tomatoes, sliced onions, fresh basil, and top with sliced fresh mozzarella balls. Sprinkle with Parmesan cheese and bake another 30 minutes or until it looks done. *I use organic ingredients whenever I can.





A lesson to listen and go at your own pace…

Fitness is important to me and as a mother of three, I want my children to learn the importance of health.  I lead by example and understand the importance of emotional health and how that can even affect our physical health.

I was blessed enough this year to finally coach a girl’s program called Girls on the Run.  It’s a program that is designed for girls that are in 3rd through 5th grade.  Their mission is :  We inspire girls to be joyful, healthy and confident using a fun, experience-based curriculum which creatively integrates running.

As a coach, we go through training and they tell us that we will experience personal growth and learn more about ourselves in the program.  It was an extremely rewarding year. I was able to share the coaching responsibilities with two fellow coaches and we had fifteen girls in the program.

We work together in the topics each week and then incorporate physical exercise and stretching  also.  We finish out the year with running a 5K in a group of around 13,000.   Before the final run, we have a practice run.  The range of girls in their confidence level varied greatly.  The exciting lesson we reminded the girls was to listen to their own bodies and pace themselves.

This is a great lesson for us to take with us in life as adults too.

So no matter where you are at in your journey to being healthier, remember to listen to your body and pace yourself.
